Chef Ana comes from a long line of butchers – her great grandmother Josefina was a revered butcher in Cuernavaca. Ana cherishes her memories with her great grandmother and wants to pass along her family recipes and tradition in a special week at La Villa Bonita. This week we will meet free-range producer, Georgina who will select for us a hog. There we will field dress the hog and bring it back to La Villa Bonita so our guests can learn and perform all of the different cuts that you have come to know and perhaps some that you don’t. This is nose-to-tail butchery so the whole hog is used in traditional Mexican dishes.
This week you will also get to know master butcher Don Domingo and visit his shop to make the most delicious chicharron which we will enjoy hot with salsas, tortillas, and beer!
