The day starts with Chef Ana’s famous big breakfast with fresh fruit, biscuits, homemade jams and jellies along with a new traditional Mexican main dish each morning.
Step back in time with an immersive earth-oven cooking experience. You’ll prepare the iconic Cochinita Pibil, achiote-marinated pork (or chicken) slow-roasted underground in banana leaves. Side dishes include fire-roasted potatoes, pickled onions, and esquites with cotija and habanero mayo. Enjoy handmade blue corn tortillas and sweet potato tamales with coconut, all paired with a bold sour orange and guava agua fresca and a smoky Pibil Margarita infused with roasted pineapple and burnt orange.
After a day of cooking outside of the house, we will come back to the house and enjoy the infinity pool, play board games, enjoy exotic cocktails and snacks along with a soup in the evening to tide us over.
Today after breakfast we will take a tour of the iconic Mercado Lucas de Galvez to pick up the seafood and other ingredients we will need for todays cooking experience. Dive into the bright, fresh flavors of Yucatán’s coast with the celebrated Tikin Xic—achiote-marinated fish baked in banana leaves—or grilled octopus in chile xcatic butter. These are served alongside coconut rice, grilled local vegetables, and a crisp jícama-cucumber salad. Begin the day with a citrus shrimp panucho appetizer and finish with papaya dulce topped with queso de bola ice cream. A watermelon-basil agua fresca and a coastal-inspired gin cocktail complete this day of seaside indulgence.
Today in the evening we will take a stroll in the immense Parque de Plancha and the see the new restaurant district just steps away from Casa Loltun.
Today after breakfast, we take a creative fusion of Mayan tradition and contemporary cuisine. Today’s class takes a refined turn with a focus on elevated Yucatecan cuisine featuring the bold, smoky flavors of recado negro. You’ll prepare a stunning main dish of wood-grilled lamb chops glazed with recado negro, served with a silky roasted plantain purée and grilled local squash topped with toasted pumpkin seeds and sea salt. Fresh handmade purple corn tortillas provide a beautiful and traditional touch, while a refreshing agua de toronja con romero (grapefruit and rosemary) keeps things cool. To complement the richness of the dish, we’ll craft a Yucatán Sour—a bright and citrus-forward cocktail made with añejo tequila, fresh sour orange juice, agave nectar, and a silky egg white foam, finished with a grilled lime garnish. This elegant pairing highlights the balance of earthy spice and vibrant acidity that defines the region’s most sophisticated flavors.

The last cooking day of your culinary adventure begins today with a refined take on Mérida’s traditional flavors. You’ll prepare Pollo en Escabeche Oriental—tender chicken slow-braised in a spiced vinegar and chile broth—paired with smoky black bean purée, handmade tortillas infused with chaya, and a vibrant beet and orange salad. Dessert is a light and fluffy coconut tres leches cake, accompanied by a refreshing chaya-pineapple agua fresca and a smooth mezcal sour with a hint of xoconostle.
Take the day to explore the city’s vibrant museums, boutique shops, or simply relax at your hotel. Optional activities include a visit to the Gran Museo del Mundo Maya, exploring the colorful neighborhoods, or taking a day trip to Izamal, the “Yellow City” or the ruins of Chichen Itza.
This evening we will go out for an optional (not included in the package) fine dining experience at one of Merida’s top restaurants like K’u’uk under Chef Pedro Evia which offers a blend of local Yucatecan elements with contemparary techniques. K’u’uk is located in a historic mansion and has been named one of The World’s 50 Best Restaurants.

Approximately 36 kilometers north of Mérida lies Progreso, a charming coastal town that serves as the gateway to the Gulf of Mexico. Known for its tranquil beaches and the impressive Progreso Pier—the longest in Mexico extending 6.5 km into the sea—Progreso offers a relaxed seaside experience.
Progreso’s culinary scene highlights the Yucatán’s coastal flavors. Fresh seafood dishes like ceviche and the traditional Tikin Xic fish, marinated in achiote and sour orange juice before being grilled, are local specialties. These meals are often enjoyed along the malecón, where ocean views enhance the dining experience.
Together, Mérida and Progreso encapsulate the essence of Yucatán’s rich cultural tapestry, offering visitors a journey through time via their historical sites, vibrant traditions, and gastronomic delights.

This package includes accommodations with private bath in the Casa Loltun, breakfast on all days, 4 cooking classes with lunch and all tours mentioned in the itinerary. There will also be “unscheduled” meals and cocktails not mentioned in the itinerary. Don’t worry. You will never go hungry or thirsty at La Villa Bonita. The kitchen in the house is stocked for your use at any time and our staff will be on hand to make drinks and snacks whenever you would like. Alcoholic beverages are also included as well as some delicious Mezcal! Packages includes pickup and return to the Merida airport (MID). It does not include tips for the staff, personal spending and shopping, nor does it include the expenses of eating out.
We want you to enjoy your vacation at La Villa Bonita and we know that things may come up that preclude you from joining us. While we do not accept cancelations or refund payments, if you need to change your reservation for any reason you can do so once without penalty and subject to availability. You will receive a credit towards that you can apply to a different date or different experience. If you choose a more expensive experience you will need to pay the difference. Payment is in full upon making your reservation. We will send you an invoice by email that you can pay online or you can call us and we will receive your payment information. Prices do not include 16% sales tax which will be added to the final price of your package. Tips for the staff are not included.
Casa Loltún: Your Home for a 7-Night Culinary Journey in Mérida
Casa Loltún, a beautifully restored colonial residence in the heart of Mérida’s historic center, is the perfect home base for Chef Ana’s 7-night culinary vacation in March 2026. This architectural gem, redesigned by renowned architect Xavier Salas and fully restored in 2022–2023, blends colonial charm with modern comfort. With a main house and additional apartments, the property accommodates up to 14 guests in handcrafted luxury, featuring high ceilings with exposed beams, traditional pasta tile floors, and elegant furniture made from local woods like Tzalam and Parota.
The home opens onto a lush tropical garden—an oasis of greenery where hummingbirds flit among native plants and citrus trees. At its center lies an inviting infinity pool, perfect for a morning swim, a midday cool-down, or a relaxing evening under the stars. It’s the ideal space to unwind between culinary adventures or gather for a cocktail at sunset.

This is the general information or frequently asked question section! If you have a question, it is most likely answered here!
Time Difference. Merida is in the CST time zone BUT there is no daylight savings in Mexico any more. Sometimes it corresponds with EST and sometimes Central.
Climate. It is hot during the day. You will need clothes for hot weather including sun protection – a hat, and sunscreen. Your room has air conditioning. Your room is equipped with a ceiling fan and an extra blanket. If you need anything, please feel free to ask.
Amenities and Laundry. We provide very nice amenities for the rooms – local soap, shampoo, and lotion. We also provide bathrobes and hair dryers. Feel free to pack light. We have laundry facilities on the property and we can wash your clothes for you.
Cancelation Policy. We understand that something may come up at the last minute and you may not be able to make your trip. While we do not allow cancellation or return of money already paid, we do allow for changes to different dates subject to availability. Please let us know as soon as possible if you need to change your date so that we may offer the space to others.
Whatsapp. Please download and install Whatsapp on your cellphone. We will use this app to stay in communication before and during your stay. Please download and install. This entails receiving an SMS text message to confirm your phone number. You will need to enter that code in the app. Once you have done so, please send us your cellphone number. As we get closer to the date, we will send out a confirmation message. Please send us a photo of yourself so that we can identify you at the airport. We will send a picture as well of your driver.
Passport and Visa. You need a valid passport to travel to Mexico with 6 months of validity beyond the date of entry into the country. Countries such as the US, Canada, Japan, England, the European Union, do not need to have a visa prior to arrival in Mexico. You will fill out a form either on the plane or upon arrival in Mexico. Keep this form in a safe place during your stay. Do not take it out with you on excursions. Upon departure, you will return this document to the airline. If you are coming from a country not listed, please check with the Mexican embassy or consulate in your home country.

Airport Pickup and Return. Airport pickup and return are provided to the Merida International Airport (MID) also know as Manuel Crescencio Rejon Interntional Airport. We will pick you up whenever you arrive. Mamy guests will need to fly to Mexico City and then Mexico City to Merida (of which there are many domestic flights) but there are some direct flights from US destinations such as DFW (Dallas Fort Worth), MIA (Miami), and IAH (Houston). It is about 30 minutes to the house from the airport. If you are staying at a hotel either before or after your stay with us in Merida, let us know and we will pick you up or deliver you to your hotel.
Health. We suggest that you check with your insurance company prior to your trip or purchase an international policy. As well, some credit cards include some international coverage. If there is something that you need to have on hand at LVB prior to your arrival, please let us know and we would be happy to arrange for that.
Vegetarian, Vegan, allergies, or special diets. We can accommodate special diets. We give priority to allergies or religious restrictions. While we can accommodate vegan or vegetarian diets, please keep in mind that we are preparing traditional Merida dishes in their original style and recipe and you may miss out on some of those dishes. Flexibility is highly valued (those who are willing to try new things) so that we can enjoy the culture and food of Merdida. Please contact us prior to arrival so that we may accommodate your diet.. We will do our best to accommodate but we cannot guarrantee that you will be able to eat all dishes or that we can make an alternative version. There is dinner on the first night which is prepared prior to your arrival. Please let us know through Whatsapp if you have anything you do not eat.
Clothing. We will do walking in town so please bring comfortable walking shoes, a hat, shorts, a light jacket, sunscreen. Our kitchen is open air. We suggest appropriate footwear in the kitchen as we are dealing with hot items and cutlery.
Electricity. Mexico has the same plugs and current (110) as in the US and Canada.
Money Matters. The Mexican currency is the peso. There are 20, 50, 100, 200, 500 and 1000 peso bills along with 10 and 50 centavo coins, and 1, 2, 5, and 10 peso coins. The current spot exchange rate as of APRIL 2025 is about 21 pesos per USD. We do not suggest exchanging money in your home airport as you will not receive a good exchange rate. Exchanging USD is limited now in Mexico and many banks do not allow for the exchange of dollars anymore for non-account holders. In the airport, you can exchange a limited amount of dollars but we suggest taking money out on your ATM card. This can be done at the airport or in Merida. As far as credit cards are concerned, most established restaurants and stores will accept cards but they are not accepted in the market or with smaller shop owners.
Cellular/Telephone. We have wi-fi in the house but it is great to have data when you are outside of the house and walking in town. Since we use WhatsApp for group announcements it is handy to have some data when outside of the house. Many cellular companies including roaming in your plan while others you can add a limited amount of data to your plan. Please check with your cellphone company.
You can give our main line number +1-631-994-3436 US for emergencies but it is transferred to Robb´s cellphone and he may not be with you at the moment of the call.
Mobility. Important to Know. If you have mobility issues, please let us know prior to your trip. Although there is walking in the market and going back and forth, we can arrange for a taxi or our vehicle to pick you up and return you to the house. We are happy to accommodate to have you participate in as many of the activities as possible. We will let you know what activities require walking and which do not. The accommodations, excursions and destinations are not wheelchair accessible, nor is our transportation. Merida is unfortunately not very wheel chair accessible in general. Nothing is particularly physically difficult or strenuous but there is plenty of walking during the week and standing when we are preparing dishes.
