Mari’s Famous Panqué de Plátano (Banana Bread)
If you’ve ever stayed with us at La Villa Bonita, you already know: Mari is the queen of breakfast. Where else can you wake up to a homemade Mexican breakfast with a brand-new main dish every single day?
Alongside those daily specialties, there’s always a bread, a biscuit, or — most beloved of all — panqué de plátano, what you’d call banana bread back home. It’s one of those simple things that makes our mornings at La Villa Bonita so special.
We grow our own dominico bananas right here on the property, and when they’re in season, we have a lot of bananas. We give them away to our staff, freeze them for later, and — best of all — turn them into bread. No one does it better than Mari. Moist inside, beautifully crusty on top, and studded with nuts, it’s a guest favorite every time.
She usually keeps our special recipes close to the chest, but not this one. Bring a little bit of La Villa Bonita home with you — download Mari’s recipe below and make this special bread in your own kitchen.
